How d I find the  XML files to change settings?  I've been looking for a while now and I'm not even close to finding it.

It depends on which settings you're trying to change.  Take a look at some of the tutorials in the User Creations section for the info on where they are and what to do with some of them.  Make sure you have your Windows Explorer set to show file type extensions or you might not see the .xml at the end of the filenames.
